General InformationCovenant is made from
grapes grown on a 3-acre parcel of the historic Larkmead Vineyard in
Napa Valley, just north of St. Helena, and vinified at Herzog's Oxnard
facility. It is 100 percent Cabernet Sauvignon, picked at the moment
when it was perceived that maturation was at its peak. Vinification is
carried out using a time-honored blend of Old and New World techniques
that include minimal crushing of the berries, gentle handling in new
French oak barrels, and no fining or filtration prior to bottling.

Kosher. A rich, exotic, distinctive style, with
aromas of ripe currant, plum and blackberry, along with an intriguing
new-leather aroma that plays in the background. Shows a measure of
finesse and polish on the finish, with ripe, integrated tannins. An
impressive debut. Best from 2006 - 2012.

There are 500 cases of this kosher Cabernet
Sauvignon made by former Wine Spectator writer Jeff Morgan. He has
secured a lease on a three-acre block of Cabernet Sauvignon from the
excellent Larkmead Vineyard and is making what must be one of the
finest kosher wines in the world. Everything about this is serious. It
is aged in 100% French oak and fulfills all the requirements for
kosher consumption. Its deep ruby/purple color is accompanied by a
big, sweet nose of black currants intermixed with damp earth,
licorice, and tobacco leaf. The wine is rich, opulent, medium to
full-bodied, concentrated, and tasty. Anticipated maturity: now-2014.
I can think of only one kosher wine that was this good or better, and
that was the limited cuvee made at the garagiste St.-Emilion property
of Chateau Valandraud

Jeff Morgan's first effort and a rousing success.
Dark ruby towards royal purple, medium- to full-bodied, with generous
but soft tannins integrating nicely and gentle overlays of vanilla and
spices from aging in new French barriques. Near-sweet blackcurrant
aromas and flavors abound, those matched nicely by hints of berries,
tobacco and Mediterranean herbs. Long, round and mouth filling.
Approachable now but best from 2006-2013. |
