General Information
The crisp night air, an ethereal rolling fog, fertile stony soil, and lush mountain springs form the backdrop for Segal's vineyards in the galilee heights. In this idyllic setting, cabernet and merlot grapes develop at their own pace until they reach their optimum ripeness. The grapes of this superb region are harvested last in the season. After the grapes are carefully crushed, the wine benefits from a leisurely paced fermentation that allows the natural aromas, tannins, and color to reach a fierce intensity. Aging for 18 months in american and french oak barrels helps round-out the wine's balance so that it's velvety-smooth, richly flavored, and intensely concentrated. The wine may be enjoyed now, but it will surely benefit from cellaring. Enjoy!
